Malliouhana Restaurant, with its exceptional haute French cuisine, offers exquisite service, wonderful 25,000 bottle wine cellars, heavenly fine food, and a glamorous clientele. You will dine in an open-sided pavilion on a rocky promontory over the sea. Its chefs have brilliantly incorporated local ingredients in classic preparation, from warm lobsters medallions sautéed with spinach and baby corn in a citrus sauce, or crayfish frita (dried crayfish dipped in potato flakes) served with a spicy tomato churney.

Blanchards ☺☺☺International

The creators behind this elegantly casual, remarkably stylish restaurant set in greeneries surrounding beside the sea, next to Malliouhana’s beach is Bob and Melinda Blanchard. With an excellent 3000-bottle wine cellar and having one of Anguilla’s most innovative and interesting cuisines, it has attracted a sprinkling of buzz-worthy celebrities (you may bump into Tom Cruise or Janet Jackson).

Behind tall teal shutters which can be opened to let in the sea breezes, you’ll enjoy sophisticated food with a Caribbean flair, enhanced with spices from Spain, Asia, California and the American Southwest. Dishes changes according to the chef’s inspiration but usually includes roasted sea brass in saffron-corn sauce; lobster cakes with mixed greens and a tomato-flavored tartar sauce; and crayfish skewers with lemongrass, toasted sesame seeds, and rum-glazed pineapple. One of their best dishes is the tuna seared on the outside and served rare inside along with Israeli couscous.

Hibernia ☺ French/IndoChinese

Chef Raoul Rodriguez and his wife, Marry Pat O’Hanlon has creatively transformed a -lovely West Indian cottage to a charming restaurant with a French- and Indonesian interior décor. Inspired by Chef Raoul’s travel from France to the Far East, Hibernia cuisine is a unorthodox yet delectable. Dishes include foie-gras pate with fig-apple relish, Asian mushroom soup topped with cream of cauliflower, Caribbean fish filets in a spicy Thai broth, pan-grilled snapper filet with ginger mousse filling (served with a wasabi sauce) and one of their best, French duck magret with light honey glaze.
